The Ultimate Egg in a Basket

There’s no food I love more than eggs… except for eggs combined with avocado, crispy toast, bacon, tomatoes and citrus. This recipe is the perfect combination of egg in a basket and avocado toast, enjoy!

Juice from 1 lemon

1 tsp dijon mustard

1 tbs plus extra for garnish fresh dill, chopped (if you don’t have fresh dill, fresh parsley, chives, green onions or cilantro would work great too!)

3 tbs extra virgin olive oil

8 cherry tomatoes, halved on a bias

1/4 cup alfalfa sprouts

2 pieces of crisp bacon

1/4-1/2 avocado, sliced

1 large piece of bread, I used Italian white bread, but any bread you have on hand works


1 egg

Heat a pan with butter

Cut circular hole from center of bread where egg will fit. Generously butter both sides of the bread

In separate pan cook bacon to desired crispness

Place bread in hot pan and crack 1 egg into hole

In the meantime make dressing. Whisk together dijon, lemon juice and 1 tbsp of dill. Slowly add oil while constantly whisking. Salt and Pepper.

Toss cherry tomatoes and alfalfa sprouts in dressing

Flip toast to crisp other side of bread

Remove toast, top with bacon, avocado, alfalfa, tomatoes, fresh dill and extra dressing
